This recipe would have to be one of my most requested. So sweet, indulgent and energy lifting!

Makes approximately 10 balls dependant upon size.


150g walnuts
125g dried apricots
125g raisins
1 tspn cinnamon powder
1 tbsp organic virgin coconut oil
unsweetened shredded coconut for coating
high powered blender (1000w) *A blender that simply is not powerful enough to blitz through nuts & dried fruits will burn out.

Add all of the ingredients to the blender. Blitz until the mixture is clumping together as a ball. Add a very small amount of honey if you find the mixture is not coming together.

Roll into bite sized balls and roll in unsweetened shredded coconut. Freshly shredded is best if you are able to purchase. I am fortunate enough to have this service at my local market. Store in a container in the fridge, if they last that long.
