Corn fritters

Perfect for breakfast, lunch and or dinner! These can be served with crispy bacon + roasted tomatoes, or with smoked trout + dairy free cream cheese.


  • 2 cups corn kernels
  • 1/2 cup gluten free flour
  • 1 tsp organic baking soda
  • 2 free range eggs
  • 1/4 cup almond milk
  • 1/2 red pepper finely diced
  • 2 spring onions finely sliced
  • 1 red chilli finely diced
  • bunch parsley chopped
  • pinch paprika
  • organic extra virgin olive oil
  • pinch sea salt
  • cracked black pepper

Combine all of the ingredients in a large glass bowl. Heat a little olive oil in a pan over a medium to high heat. Add heaped spoonfuls, flatten and fry until golden brown.

Serve with a fried egg on top, snow pea sprouts, sweet chilli sauce + a spoonful of natural coconut yoghurt.
