I know I tend to say that everything is my fave, but I just adore so many things – especially fritters!
Hey – I just LOVE celebrating the awesomeness of food!
These bad boys have been a long standing breakfast, lunch and dinner in my household – my hubby loves just as much.
If you like it hot, fire the fritters up with a little chilli sambal – serve with roasted tomatoes, avocado, salsa or a side salad.
Tonight this was dinner on a bed of baby spinach – served with a sliced avo sprinkled with a little lemon pepper.
Quick, and dead easy.
I tend to do smaller fritters when serving as an appetiser and top with fresh homemade salsa.
YOU WILL NEED:
2 cups organic sweetcorn kernels
1/2 cup gluten free flour
1 tsp organic baking soda
2 free range eggs
1/4 cup almond milk
1/2 red pepper finely diced
2 spring onions finely sliced
1 red chilli finely diced
bunch parsley chopped
organic extra virgin olive oil
pinch himalayan sea salt
cracked black pepper
Combine all of the ingredients in a large glass bowl. Heat a little evoo in a moderate pan. Add heaped spoonfuls, flatten and fry until golden brown.
