Arugula, Grape & Walnut Salad with Pomegranate Dressing (GF)

Fresh, savoury with a hint of sweetness. These flavours mingle together just fabulously. Not to forget the avo – my love.

Yes, I love a lot of things…BUT this would have to be – probably one of the best salad combinations I have yet devised. Hubby is of the same opinion. Check! I enjoyed it so much that I am planning to make it again this weekend when we have some friends over for a BBQ.

YOU WILL NEED:

bag of baby arugula
1 cup red seedless grapes
1 avo cubed
1/2 cup toasted walnuts (I dry roast mine in a frypan – oven for 10 works just as well!)
small thinly sliced red onion
soft goats cheese crumbled

dressing

6 tbsp organic extra virgin olive oil
2 tbsp organic apple cider vinegar
2 tbsp pomegranate molasses
himalayan sea salt

Place the dressing ingredients in a jam jar and shake things up. Set aside.

Place all the salad ingredients in a large serving bowl – save some additional goats cheese to serve.

Pour dressing all over and mix through.

Serve with crumbled goats cheese.

Fantastic on it’s own for a lunch for 2, or as a side for 4.
