When I began making changes in my diet some years ago, I believed that desserts, slices, cakes and the like would never be accessible again. Thanks to some amazing ingredients that are available nowadays – and a little creativity…vegan, raw, gluten & processed sugar free treats have gone off! And…they are far superior in taste, fresh, made from scratch, more satisfying and most of all – nutritious.
I never feel guilty eating them.
I created this little beauty this week to take to a girlfriend’s house for morning tea – and may I say, it was rather scrumptious. The added seeds make this a protein booster – a perfect snack after you hit the gym.
YOU WILL NEED:
1 cup pitted dates
1 cup dried apricots (soaked & drained)
2 tbsp chia seeds
1 small piece fresh ginger (1/4 tspn)
1/2 cup raw cashews
1 tbsp coconut oil
zest of 1 orange
1/2 cup pepita seeds
shredded coconut
Blitz everything in a food processor (except the pepita seeds), until combined and coming together.
Stir in the pepita seeds.
Press evenly into a square pan and sprinkle with shredded coconut.
Store in the fridge to set and cut into bite size squares.
