I am off camping in the south west for the long weekend Easter break. I have been busy this morning prepping some healthy snacks and treats for us to gorge on whilst we are “glamping” in the wilderness.
I am so looking forward to totally immersing myself in nature for the next four days. Bush walks, camp fires, hot cuppas, stillness and reflection. I may even frolic in the water if the weather permits.
Easter doesn’t need to be about chocolate! Plant powered treats all the way…
These little yellow balls of goodness are tangy, sweet and moorish.
It is literally going to take you 10 mins to have morning tea ready.
Let’s get cracking. Flick the kettle on.
YOU WILL NEED:
1 cup raw cashews
1 cup organic shredded coconut
1 lemon zest
juice of half a lemon
1 vanilla bean
little pinch himalayan sea salt
1 & 1/2 tbsp raw honey
*additional shredded coconut for rolling
Throw everything into a high powered food processor and blitz until the mixture comes together.
Roll into bite size balls.
Roll in shredded coconut to coat.
Refrigerate until ready to serve.
