YOU WILL NEED:
1/4 cup chia seeds
1 cup organic coconut cream
2 tsp raw honey
shredded organic coconut
Place the chia seeds in a bowl or mason jar. Add the coconut cream and raw honey. Squeeze in the juice of 1/2 lime. Whisk until completely combined. Cover and place in the fridge for at least 2 hours. This will allow time for the chia seeds to absorb the liquid and set.
Serve in martini glasses with a layer of mango cubes, a layer of pudding, and top with shredded coconut, mango cubes and a slice of lime.
