Coconut, Mango & Lime Chia Pudding (DF & GF)

Chia seeds are calcium packed powerhouses, and a great protein source. Perfect for any time of the day, they can be infused with various flavours, fruits, nuts, seeds and customisations. Opportunities are rife!

Make ahead in mason jars for a perfect travel breakfast, snack or dessert. Pack into flip top containers for a healthy school snack/lunch option.

This pudding says elegance. Tropical, with rich creamy texture. Serve this to your dinner guests. It will take next to no time to prepare, but look amazing.

YOU WILL NEED:

*serves 2 

1/4 cup chia seeds
1 cup organic coconut cream
2 tsp raw honey
1/2 lime

to serve

shredded organic coconut
mango cubes

Place the chia seeds in a bowl or mason jar. Add the coconut cream and raw honey. Squeeze in the juice of 1/2 lime. Whisk until completely combined. Cover and place in the fridge for at least 2 hours. This will allow time for the chia seeds to absorb the liquid and set.

Serve in martini glasses with a layer of mango cubes, a layer of pudding, and top with shredded coconut, mango cubes and a slice of lime.
