Vanilla Custard (DF, GF)

It’s dad’s birthday today, so I am hosting him and mum for dinner this evening. This is on the dessert menu.

It’s super simple, it tastes great…and you can add any flavours to mix it up.

You can make it well in advance, so you are all organised.

I never tell anyone beforehand that it is made with tofu, as I like to see their reactions.

I haven’t had a poor one….yet!

INGREDIENTS:

300g silken tofu *non GMO
3 tbsp melted coconut oil *cold pressed ORGANIC virgin
1 vanilla bean *scraped
pinch cinnamon
1/4 cup raw honey

METHOD:

Add all of the ingredients into a blender. Blend on medium until a smooth consistency. Pour and divide the mixture into two serving cups and place in the fridge.

For the richest texture, leave for at least two hours.

Garnish with additional vanilla & passionfruit (or berries).
